When the weather gets hot, most of us prefer to make easy desserts for the family. These summer dessert recipes include no-bake desserts, fruit pies, cobblers, cupcakes, ice creams, and so much more!

These are 2 of my favourite summer dessert recipes that I would like to share with you; a chocolate mouse and a lemon syllabub. They are chosen on the grounds that they take only a little time to prepare and will give you stunning and delicious desserts every time. You don’t need to be Gordon Ramsey to produce a tasty, easy summer dessert that everyone can enjoy, so get your apron on and go for it!

Chocolate Mousse

Sweet, creamy, and chocolatey dessert that serves 4.

Ingredients

  • 4 ounces of good quality dark chocolate
  • 4 eggs – separated and whites whisked stiffly into peaks
  • 1 tablespoon of sugar
  • 1/4 pint (8 tbsp) heavy cream, lightly whipped

Instructions

In a double boiler or get a large basin over a pan of hot but NOT boiling water and break the chocolate into it, allowing it to soften and do not get water in there. Keep an eye on this and keep stirring.

Separate your egg yolks from the whites and add these to the chocolate mixture, along with the sugar. Beat well until light and soft.

In a bowl, whisk the egg whites into peaks with a stand or hand mixer. In another bowl, whisk the heavy cream lightly with a stand or hand mixer.

Remove the basin from over the hot water, beating continuously as it cools. When it is cool, but not set, fold in the whipped cream, then the whisked egg whites.

Put into four cold serving glass dishes and chill for an hour or so. You can add whipped cream for the topping.

Chocolate Mousse Variation: Place a couple of amaretti biscuits, doused in a little Tia Maria, in the bottom of the glasses, before spooning in your mousse mixture. What a combination, coffee, chocolate and almonds!

Lemon Syllabub

Lemon Syllabub

An old fashioned, easy summer dessert, refreshing and tangy that serves 4.

Ingredients

  • 2 tablespoons of brandy
  • 1/2 cup of white wine (I like a Riesling)
  • 4 tbsp of sugar
  • 1 cup of heavy cream
  • 1 large lemon

Instructions

Using a fine grater, grate the rind from the lemon. In a bowl, squeeze the lemon juice. Add the rind (keep some for the toppings) the wine, and the brandy. Mix together.

With a stand mixer or hand mixer whip the heavy cream and sugar together until you start to see soft peaks.

Add the liquid mixture to the whipped cream slowly and whisk all the time.

Slowly spoon the mixture into 4 tall serving glasses, cold of course, and chill until needed. Serve with a lemon rind on top. You can also add slices of lemon to decorate.

Kitchen tips: You can make the Lemon Syllabub one day ahead, as it keeps well overnight in the fridge. There, in about 15 minutes, you have created a quintessentially Olde English “sweet” for the grown-ups.

1. Fergus Falls, Minnesota

The city of Fergus Falls is a community with a surprising amount of tourist attractions for its size and definitely on the list of places to visit in Minnesota. Those interested in sports and recreation, and those interested in the arts, will have plenty of reasons to want to spend some time in this western Minnesota town, located 60 miles southeast of Fargo in Otter Tail County, right off of Interstate 94.

The rolling hills, prairie, and forests of the area make Fergus Falls a place of striking scenic beauty. For recreation opportunities, there are 1,048 lakes in Otter Tail County, a large and diverse bird population for birding enthusiasts, a 55-mile paved Central Lakes State Trail that connects to the 46-mile Lake Wobegon Trail in Osakis, golf, and multiple city parks. There’s also the the BMX Track.

A Center for the Arts features concerts, theater, film, and more. In the summer, they offer Outdoor Concert Series

For history and education, there is the Otter Tail County Historical Society Museum, as well as the Prairie Wetlands Learning Center to promote understanding of the natural environment.

Fergus Falls is right on the 150-mile Otter Trail Scenic Byway, one of Minnesota’s 20 byways. The Otter Trail Scenic Byway is a loop that takes you to 23 sites, including Perham with its specialty shops and doll museum, Maplewood State Park, and Pelican Rapids. One of the favourite top things to do in Minnesota is arguably the centre of nightlife in Minneapolis, the hip art deco music venue known as First Avenue that started as a Greyhound Bus depot in 1937. In 1970 it was converted to a nightclub known as the Depot, then Uncle Sam’s, then Sam’s, and finally First Avenue.

First Avenue has hosted international headliners from the popular music world such as the Allman Brothers Band, U2, and Frank Zappa, but it is especially well known as the breeding ground for pretty much every band out of Minnesota that’s made a name for itself in the last several decades. Most notably, Prince was long a regular act at First Avenue, and filmed his movie Purple Rain there.

First Avenue narrowly dodged bankruptcy in 2004, but survived and remains an integral part of the Midwest music scene.

As a kind of annex to First Avenue (it used to be the restaurant and coat room for the bus station), the 7th Street Entry is a smaller venue for mostly local bands trying to establish themselves. The First Avenue neighbourhood itself is an area of shopping, bars, and restaurants that draws plenty of people during both the day and evening, in some ways the main drag of Minneapolis.

Why do so many millions of people from other cities, states, and even countries flock to the Mall of America?

Perhaps because it has four floors, 4 million square feet (making it the largest mall in the country), 520 retail outlets, 50 restaurants, multiple movie theatres, an entire miniature golf course, 25 amusement park rides and attractions, a 1.2 million gallon aquarium, SEA LIFE Minnesota Aquarium, Nickelodeon Universe®, and the Crayola Experience.

Bloomington is a southern suburb of Minneapolis-St. Paul. There are many large hotels and motels close enough to the Mall of America to provide shuttle service to the Mall, including Mystic Lake, the largest hotel-casino in the midwest.

4. Minnesota State Capitol, St. Paul

Designed by famous architect Cass Gilbert, the Minnesota State Capitol was modelled after St. Peter’s Basilica in Rome. Completed in 1905, it is topped by an unsupported marble dome, the second largest in the world surpassed only by St. Peter’s.

Visitors may observe Minnesota House and Senate sessions. There are 45 minute guided tours of the building available, featuring paintings, statues, flags, portraits of the governors, the lavish rathskellar café, and the gold-leafed quadriga (a chariot drawn by four horses) on the roof.

5. Voyageurs National Park, International Falls

One thing that makes the Voyageurs National Park in the extreme north of Minnesota unusual is that the bulk of it is water, or only accessible by water. It includes four large lakes, smaller lakes, swamps, bogs, beaver ponds, islands, peninsulas, woods, and hilly terrain.

Enjoy boating, fishing, hiking, ice fishing, snowmobiling, cross country skiing and more. Certainly wildlife watching, as Voyageurs has 240 bird species, 53 fish species, 10 amphibian and reptile species, and 42 mammal species, including black bears, wolves, deer, and moose.

The closest town of any size is International Falls 11 miles west on the Canadian border. If you’ve heard of International Falls at all, it’s probably because it so often is mentioned on weather reports as having the coldest temperature in the nation on a given day.

So, yes, this is a very, very cold area of the state. Camping is a common activity at Voyageurs, but if you’re going to try it during the colder months you better know what you’re doing and be prepared. It’s a wonderful adventure, but only for hearty souls.

However, there are other lodging options besides roughing it in a tent, ranging from rental cabins, to the 1912 Kettle Falls Hotel, to chain motels in International Falls such as Days Inn and Holiday Inn.

6. SPAM Museum

An entire museum in Austin, Minnesota, is dedicated to the culture and history that surrounds SPAM, a pop culture icon first introduced in the 1930s. The interactive museum promises fun for all ages and charges no admission. According to SPAM’s website, visitors to the museum can view vintage advertising, can their own SPAM, learn new recipes, play games and shop for collectibles.

7. Paul Bunyon Land

A 26 foot tall statue of Paul Bunyon is the first to greet visitors to Paul Bunyon Land in Brainerd, Minnesota. This theme park, complete with 27 rides and attractions, includes a ghost mine, roller coaster, swings and bumper cars. A ticket to Paul Bunyon land also grants guests access to Paul’s Petting Barn and This Old Farm Pioneer Village. Pioneer Village is a mock pioneer town, complete with a log house, fire station, blacksmith, doctor’s office and more.

Ed’s Museum, located in Wyckoff, Minnesota, is a celebration of the pack rat in all of us. Ed Krieger was the owner and operator of grocery store where he showed old movies and different types of memorabilia. Many of the pieces that are on display in the museum are from the 1930s and relate to either film or the town of Wyckoff. 1. Antietam National Battleground, Sharpsburg

Antietam National Battleground is closed for renovations and will reopen later this fall. During the construction there will be a temporary visitor centre installed. It will have a small exhibit area, visitor information/fee collection area, bookstore, and restrooms.

The first battle of the Civil War that occurred on Union territory took place near Sharpsburg, Maryland, close to where Maryland, West Virginia, and Virginia come together. Northerners called it the Battle of Antietam; Southerners called it the Battle of Sharpsburg.

The 1862 encounter was the deadliest single day battle of the war, resulting in over 23,000 deaths. The Union forces had a three to one numerical edge, but the Confederate forces held the positional advantage. Over the course of the bloody day, numerous attacks were launched and resisted, with the result being that little or no ground changed hands; the armies basically fought to a draw.

Today visitors are free to walk the whole area where the battle occurred at the Antietam National Battleground —the fields once filled with corpses, and Burnside Bridge and the other key landmarks one side fiercely fought to hold onto while the other side fiercely fought to take them away. There is a visitor centre on site, with maps, documentaries, Park Rangers to answer questions, and guided tours of the battlefield are available.

2. Chesapeake Bay Maritime Museum, St. Michaels

Located on the eastern shore of the Chesapeake Bay, St. Michaels is home to the Chesapeake Bay Maritime Museum, which tells about the lifestyle of the seafarers and fishermen of the area who made their living from the sea.

The museum contains the world’s largest collection of boats that once sailed the Chesapeake Bay. Year round, the museum offers educational seminars and workshops.

Alcohol

Although Disney does allow you to bring a limited quantity of alcohol on board, cocktails and other alcoholic beverages you purchase on the ship are provided at an additional cost. That goes for the alcohol purchased on shore as well.

Just to be clear about this. I don’t want to leave it off and have any confusion. No, the things you buy at the gift shops are not included in the cost of the cruise. However, you will find things on the Disney Cruise Line that are exclusive and you are not likely to find elsewhere.

Although most of the dining on your Disney cruise is included in the price, there are some Disney Cruise Line added costs where it comes to the fine dining restaurants Palo and Remy. Rather than avoid this or try to work around the price, this is one instance where it is worth the extra money to have an exceptional meal.

The arcade and golf simulator or sport simulators costs are not included in a Disney Cruise fare, so you must pay for these ship activities. You can book the simulators online before you sail.

The wireless internet access is an added cost on a Disney Cruise and can get pretty expensive, therefore spend quality time with the family and unplug instead. After all you are on a vacation! Keep in mind that you can sometimes get wifi while in port. The Disney Cruise ship does have its own DCL navigator app that will allow you to see the restaurant menus, the daily fun activities and you can even text each other on the cruise ship or on the Castaway Cay.

Tips are not included, but you will be automatically charged a percentage for the dedicated crew that served you during the trip. You are not required to settle on the amount you have been charged for gratuities and can take your bill to Guest Services on the final night of your voyage. That’s just one reason this berry salsa recipe really pops as a summertime dish. It’s a colourful and vibrant expression of those three popular national colours (lots of countries use red, white, and blue!). To make the July 1st Canadian berry salsa version, you could replace the blueberries with raspberries, but who can resist fresh blueberries at this time of year?

What is Berry Salsa?

Berry salsa is not too different from a berry fruit salad. In fact, it may be a bit of a distinction without a difference. The main thing that makes this concoction really flavourful and worth making is the cheese curds and the fresh mint that compliment the berry flavours so well. First, the squeaky cheese adds texture and creaminess to the mix. If you don’t have curds, that’s alright, too. I also use pearl mozzarella balls pinched into halves. The mint is what really makes this fruit mixture more of a salsa than a triple berry salad. It adds some zip. Also, the smaller the strawberries and cheese pieces are, the more dippable your triple berry salsa is.

You can eat this berry salsa with a spoon or dip your favourite crackers. It’s also really good with cookies like this Berry Shortcake Cornmeal Cookie. Depending on how chunky you make your salsa, you can use it for different things. It makes a fantastic appetizer, side dish, or dessert topper. It’s wonderfully refreshing on a hot afternoon or a warm evening out on the porch. Whether it’s an appetite appeaser at your outdoor barbecue or simply a quick sweet treat to enjoy any time of day, chopping up some berries for this easy mix of basic fresh components is always a good idea.   • 1 regular package of strawberries
  • 1 package blueberries
  • 1 package Pearls Bocconcini balls (also called pearl mozzarella balls. You could also use cheese curds.)
  • 1 sprig of mint

How to Make a berry Salsa

Berry Salsa Ingredients- cut strawberries

Wash strawberries and blueberries. Cut tops off strawberries. Diced the strawberries. Place in medium bowl.

Add in blueberries and pearl mozzarella balls. I like to pinch the balls in halves to make it smaller then add them.

Chop mint small and add to the bowl. Toss well and keep in fridge until ready to serve.
