These strawberry margarita cupcakes with tequila frosting are so easy to make and the perfect Cinco de Mayo dessert to serve on May 5th!
Around the house, there is always something sweet being baked or a treat placed on the counter. Kid’s know my house is the house to visit when you are in a mood for a treat. It just so happens that the adults know that as well. They come for miles and miles around to taste my sweet treats, mostly because we live a little bit away from them. Anyways, during one of my latest baking adventures, I wanted to try something different. Adult’s deserved a special treat, so I made a Strawberry Margarita cupcake.
On several different occasions, I have been told just how delicious my classic and iced Margarita drinks are, so I wanted to make more drinks. After many weeks of debating on what drink to make or how to present it, I ultimately went with making a strawberry Margarita dessert. These strawberry Margarita cupcakes are not only fun Mexican cupcakes to eat, but taste exactly the same as a strawberry Margarita cocktail. Are you ready to make these strawberry Margarita cupcakes with Tequila frosting?
Recipe for strawberry margarita cupcakes
You will need the following ingredients:
Cupcake ingredients list
- 1 1/2 cup Flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1 stick unsalted butter softened
- 1 cup sugar
- 2 large eggs
- 1/4 cup lime juice
- 1 Tbsp Tequila
- 1/4 tsp. vanilla extract
- 1/2 cup whole milk
- 1/4 cup finely chopped strawberries
- 2 tsp strawberry flavouring
Frosting Ingredients
- 1 cup softened unsalted butter
- 3 cups powdered sugar
- 1/4 cup lime juice
- 1 cap full of tequila
- 5 strawberries
- 3 limes
How to make strawberry margarita cupcakes
Pre-heat oven to 350 degrees.
Sift all-purpose flour into a mixing bowl. Add baking powder, baking soda and salt to the flour and whisk place to the side. Add all wet ingredients, including strawberries, in a large mixing bowl for 2 minutes until thoroughly blended. Now combine the two mixes together and mix well so that they are all combined.
Place cupcake liners into the cupcake pan and then fill each cupcake liner ¾ full with cake mixture. Bake in preheated oven until toothpick inserted the centre cupcake comes out clean, about 21 minutes. Remove from oven and allow to cool several minutes.
Once cooled, poke holes into the cupcake and brush tequila over the top using a BBQ sauce brush, or you can dip the top of the cupcake into a bowl of tequila.
Frosting Directions
Add in powdered sugar, butter, 1 cap full of tequila and lime juice all at once into a standing mixer. Set on Low speed and slowly mix increasing to medium speed. Continue to mix till the frosting is light and fluffy.
Frost cooled strawberry margarita cupcakes and top with a strawberry and lime slice.
