During the heat of summer, even on a pleasantly mild afternoon, I love a chilled treat. Sometimes a creamy frozen concoction hits the spot. Often a burst of citrus does the trick. But on a special day, what I really love is combining the two. That’s what this lemon orange ice cream is all about. It’s not a sorbet and it’s not a sherbet. This is real genuine soft serve ice cream with a citrus base that is going to drive you wild.

Sherbet or Ice Cream?
Typically ice cream-related items made with fruit come as sherbets or sorbets. Sherbets of course being the ones that include milk. These are great but they are more fruit-focused and not as creamy as real ice cream. Ice cream only needs 10% milk fat to be labeled as such. Missing that mark it becomes classified as sherbet. Sorbet, on the other hand, contains no dairy. This delicious lemon orange ice cream contains much more cream, making it distinct among other citrus-based desserts. I enjoy the enhanced creaminess that contributes to the bright and tangy elements of the citrus juice. Since it’s made in an ice cream maker and churned during the freezing process, it’s distinctively different from sherbet; however, you may choose to freeze this lemon and orange ice cream for a longer period of time. If you do, the citrus may still crystallize and affect the otherwise creamy texture.
Sweet Secret
The trick to making delicious lemon orange ice cream is neither citrus nor cream. It’s the liquid sweetener. Personally, my choice is to use real maple syrup. The syrup adds depth of flavour and a thickness to the mixture that balances out the citric acid from the orange juice. maple syrup adds yet another layer of flavour and contributes to setting this ice cream apart from other fruit-based creams. It not only makes it different, it makes the flavour stand out as one of my all-time favourite combinations. It reminds me of a sweet breakfast bun with a tangy orange glaze. You might even scoop some onto your French toast or Belgian waffle.
