Breakfast Donut Casserole With Chia Seeds and Flax

One of my favorite things to make is breakfast casserole. Even if you are not typically a breakfast person, you can appreciate how brilliantly simple it is. You’ll especially love my donut casserole with chia seeds. Breakfast casseroles are akin to a one-skillet meal, but they are even easier to make and they can supply breakfast for at least a couple of days.

Donut casseroles are a quick and easy way to feed a family without making a lot of dishes or taking too much time in the morning. Because of that, I like them better than other shortcut solutions like toaster pastries or smoothies. The Donut casserole is a perfect alternative for the donut and coffee types, too.

Special Occasions

Although this recipe is an easy fix for most people, this delicious morning treat is also ideal for special occasions such as mother’s day or a birthday celebration. I love that it’s an easy way for kids to treat their moms and it tastes like a unique recipe only to have on rare or special occasions.

What is a Donut Casserole?

My donut casserole with chia seeds is a baked breakfast treat that stands apart from other casseroles. For this recipe, we start small with only four cinnamon donuts. That won’t fill a casserole dish, so we’ll use a pie plate instead. As with other breakfast casseroles, we’ll mix the donuts with a binding mixture and then bake. The mixture for my casserole includes flax and chia seeds, which help to create the illusion of a healthy meal. This donut casserole will serve 4 people, so about 1 donut each. You can also double up the recipe ingredients to serve a larger family.

The New Way to Have Donuts

When you try this mix of cinnamon donuts you’ll fall in love with the crunch on top and the soft chewy centre. It’s very similar to bread pudding and it’s a wonderful alternative to coffee cake. This is the breakfast casserole for those of us who enjoy a small breakfast but want to still sit down and take a moment before starting up the day. I recommend making it the night before mainly because you want the oven to have time to preheat, but preparing this meal is so easy you can start it just prior to your normal morning routine.

Donut Casserole Ingredients

  • 4 cinnamon donuts (or apple fritters)
  • ½ cup of milk
  • 1 tbsp chia seeds
  • 1 tsp flax

How To Make A Breakfast Donut Casserole

  1. Cut up the donuts and cinnamon into 2-inch pieces. These don’t have to be perfect, this recipe is very forgiving, so don’t measure, just chop.
  2. Place pieces into a bowl.
  3. In another bowl, add in the flax, chia, and milk and stir to combine.
  4. Mix flax mixture with the donuts and stir to combine.
  5. Place mixture into a pie plate.
  6. Fill right to the top and place in a 350-degree oven for 25 minutes or until the tops of the donuts are brown and slightly crunchy.
  7. Let cool and enjoy.

Ingredients
