Rainbow Charcuterie Board

A rainbow charcuterie board is a perfect themed dessert for this Irish occasion. When we think of St. Patricks Day we see leprechauns, rainbows, and a pot of cold. While this board uses some basic fruits and marshmallows for clouds to create the rainbow snack board, there are many other ways to create clouds. You could use white chocolate pretzels, perhaps Babybel cheese, or even meringue cookies.

Fruits for a Charcuterie Board

You can use many different colourful fruits for a fruit charcuterie board. Think about what fruits you like and what ones would make a bright and beautiful rainbow charcuterie. Oranges, kiwis, grapes, blueberries, and pineapples are just a few that you can use on your board. When you visit the grocery store look for fruits that will make your table shine. Find some tropical fruits that most wouldn’t think about buying but will try when they see them on a snack board.

Dessert Charcuterie board Ingredients

  • 1 cup purple grapes
  • 2 oranges; peeled
  • 1 cup pineapple, cut in chuncks
  • 1 cup green grapes
  • 1/2 cup raspberries
  • 1 cup strawberries; sliced
  • 2 cups marshmallows
  • Blue moon and shamrock marshmallows (from Lucky Charms Cereal)

Kitchen tools needed

  • Cutting board
  • Knife
  • Charcuterie board or board

How to make the rainbow charcuterie board

Wash all fruits before preparing.

On a cutting board, cut the strawberries in slices. Peel oranges and separate into slices. Cut pineapples in chunks.

In rows, place the fruits on the board. Start with the strawberries, add the raspberries, the green grapes, the sliced pineapple, the sliced oranges, and the purple grapes. Add the blue marshmallows or replace with blueberries. Add marshmallows to the top of the St. Patrick’s Day dessert charcuterie board as clouds and put some shamrock marshmallows on top.

Ingredients
  

  • 1 cup purple grapes
