Carrot Coffee Cake Recipe

Coffee has been around since the early 1600s. During this time sweetbreads topped with fruit, nuts and spices like this Carrot Cake Coffee Cake. The name coffee cake became more common in the 1800s. Although the origin of coffee cake is unknown some say it is possibly German or Dutch. This Carrot Coffee Cake is the perfect dessert for a break during a busy day, a social gathering, or a tea party.

What is Coffee Cake

When you hear the mention of Coffee Cake many may think that there is actually a hint of coffee in the flavouring. While some may have a hint of coffee most usually don’t have any. They can be made in almost any cake pan you have on hand. Many like a loaf pan for easy slicing or a bundt pan to make it a bit fancier. Most coffee cakes have a crumble topping known as a streusel and may have a light drizzle of cream cheese glaze over top, unlike other cakes that are frosted.

Recipe for crumble topping

Making a crumble topping is easy to do. Most crumble topping recipes are made with 3 simple ingredients of sugar, flour and butter. It can also be made with oats, nuts, or spices such as cinnamon or nutmeg. Many use oats for an apple crumble pie. When combining the ingredients, do not over mix or the crumble may fall and not be as crunchy once baked onto the top of your dessert. The crumble is the best part.

Ingredients for Crumble topping

  • 1 cup flour 
  • ½ cup unsalted butter, softened 
  • ¾ cup sugar 
  • 1 tsp ground cinnamon 
  • ¼ tsp ground nutmeg 
  • ½ cup chopped walnuts 
  • ¼ tsp kosher salt 

How to make a crumble topping

Using a small bowl, combine the flour, sugar, unsalted butter, cinnamon, nutmeg and salt. Mix with a fork or fingers to create sand like crumbs. Fold in the chopped walnuts and set aside.

When we think of carrot cake it reminds us of springtime, so it is a good choice for an Easter cake idea. This recipe for an Easter cake gives us the flavours of both a carrot cake and a coffee cake making it a favourite for those of us who like both.

Kitchen tools Needed

  • Springform pan 
  • Bowls
  • Wisk
  • Hand mixer

Carrot and coffee cake Ingredients 

  • ½ cup unsalted butter, softened 
  • ½ cup sugar 
  • ½ cup light brown sugar 
  • 3 large eggs
  • 1 tsp pure vanilla extract 
  • 1 tsp ground cinnamon 
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg 
  • 1 ½ tsp baking powder
  • ¼ tsp kosher salt 
  • 1 ½ cups flour 
  • ½ cup milk 
  • 2 cups grated carrots 
  • ¾ cup chopped walnuts
  • Baking spray for springform pan 

Cake Directions 

Preheat oven to 350 and spray a 9 inch springform pan with pam baking spray and line the bottom with parchment paper. 

Using a medium bowl, whisk together the flour, baking soda, and spices.

Using a large bowl, beat the butter and sugar and brown sugar with a hand mixer until light and fluffy. Beat in the eggs, 1 at a time until combined. Beat in the vanilla until combined. Alternate between the milk and dry ingredients until combined. Fold in with a spatula the grated carrots and chopped walnuts. Pour batter into the baking dish.

Sprinkle the crumble topping on top and place in the oven to bake for 50-60 minutes or until a toothpick comes out clean. 

Allow the carrot coffee cake to cool completely. Remove the carrot cake coffee cake from the springform pan and place onto a serving tray.

ingredients

  • 4 oz cream cheese, softened 
  • ½ cup powdered sugar 
  • ¼ tsp kosher salt 
  • ½ tsp pure vanilla extract 
  • 2 tbsp milk 

How to make a cream cheese glaze

Combine all glaze ingredients into a medium bowl and beat until combined and smooth. If the glaze is thick, thin with another tbsp of milk. Drizzle the glaze over the carrot cake coffee cake and serve with ice cream and whipped cream!
