Super Easy Thin Mint Brownies For St. Patrick’ Day

Is there anything better than chocolate and mint? It’s an amazing combination and one that becomes quite popular around Saint Patrick’s Day. After all, we need a green dessert to celebrate the holiday. Instead of reaching for that same green milkshake you get at your favourite fast food place, why not celebrate St. Patrick’s Day with some delicious Thin Mint Brownies!

Brownies Baking Tips

These Thin Mint Brownies are sure to rock your world. The mint and chocolate ganache layers take these boxed brownies and turn them into something truly special. No one will ever guess that these brownies weren’t made from scratch. Oh, and did I mention that the ganache layer is topped with Fudge Mint Cookies? Oh, yeah. These are the brownies you’ve been dreaming out. Of course, if you want to take them over the top, you can also add mint chocolate chips to the brownie mx.

If you’re looking to save time, you can make the brownie layer ahead of time. You can make it the day before or you can make it several days in advance and pop it in the freezer. Allow the brownies to thaw and come to room temperature before adding the other layers.

How To Serve the Mint Brownies

These brownies are an absolute must for those that love chocolate and mint. Whether you’re making these for your family, a bake sale, or just to eat by yourself as a treat after a hard day, these will be a big hit.  And, if you happen to top these with mint chocolate chip ice cream, a bit of hot fudge sauce, and even some whipped cream – well, I promise not to tell.

In all seriousness, these Thin Mint Brownies are the perfect addition to a child’s St. Patrick’s Day party, but are also something that parents are going to enjoy. Make sure to have plenty of milk and coffee on hand to enjoy with these delicious brownies.

Thin Mint Gooey Brownies Recipe

Thin Mint Gooey Brownies Recipe 

Makes 1 9×13 baking dish

Brownies Ingredients

  • 1 chocolate brownie mix 

Mint Frosting Ingredients

  • 1 cup unsalted sweet cream butter, softened 
  • 3 tbsp heavy whipping cream 
  • 2 1/2 cup powder sugar 
  • 2 tsp mint extract 
  • 2 -3 drops of green food colouring 

Chocolate Ganache

  • 1/2 cup unsalted sweet cream butter, melted
  • 1 11 oz bag of milk chocolate chips
  • 1/2 Package of mint creme sandwich cookies or Thin Mint cookies (think Think Mint Girl Guide Cookies)

Material Needed

  • 1 9×13 baking dish fitted with parchment paper
  • 1 piping bag fitted with a star tip

How To Make The Mint Brownies

  1. Preheat oven to 350 degrees
  2. Using a standing mixer, prepare the brownie mix according to the box
  3. Bake in the oven for 20 minutes
  4. While the brownies are baking, prepare the frosting
  5. Using the standing mixer, combine all ingredients and mix on medium speed until combined and smooth
  6. Scoop frosting into the piping bag
  7. Once the brownies are baked, let cool to room temperature
  8. Once the brownies are cooled, pipe the frosting around the brownies
  9. Using a flat spatula or knife, smooth the frosting out over the brownies
  10. Set aside while you make the chocolate ganache
  11. Using a small sauce pan, heat up the heavy whipping cream until it start to simmers
  12. Pour the chocolate chips into a medium bowl
  13. Pour the heavy whipping cream over the chocolate chips and let sit for a few minutes
  14. Using a whisk, mix until smooth
  15. Pour ganache over the frosting
  16. Using a ziplock bag and a rolling-pin, crush up the mint cookies into crumbles
  17. Sprinkle the crushed cookies over the ganache
  18. Place into the fridge for an hour or until ganache hardens
  19. Cut into bars and enjoy!
