To make zucchini noodles, simply spiralize zucchini into thin and long spiral stands usually by using a handheld spiralizer or with a stand mixer spiralizer attachment. You can also purchase store bought fresh zucchini noodles.
How to Prep Zoodles
I like to use bone broth with this Zoodles low carb recipe, but you can use chicken broth if that is easier for you. I recommend using a good quality parmesan cheese for this recipe. This creamy zucchini pasta recipe calls for prosciutto, fried crispy. Be sure not to burn it for the maximum flavour.
You will use 2 small avocados in this recipe with Zoodles. They should be ripe. If your avocados are still a little hard, you can speed up the process by placing them in a brown bag with an apple or a banana for a few days.

I don’t think I could ever grow tired of zucchini. It is such a versatile veggie that brings so much flavour to so many dishes. Plus, there are so many ways to make it! This Creamy Avocado Zoodles recipe is bound to be a favourite for anyone who tries it, even if they aren’t as enthusiastic as I am about zukes!

Zoodles Ingredients:
- 2 tbsp butter, divided
- 3-4 slices prosciutto
- 1 small white onion
- 1 package of fresh zucchini noodles (340 grams), drained
- 2 small ripe avocados
- ½ tsp salt
- 2 tsp garlic powder
- ½ tsp pepper
- ½ cup chicken bone broth, or chicken broth
- ¼ cup shredded parmesan cheese, plus additional for topping
Note: Add fresh garlic, and cayenne pepper sauce for a little extra spice. Or add Sundried tomatoes for an extra savoury flavour.
How to Prepare Zoodles
Add 1 tbsp of butter to a large skillet pan. Heat over medium-high heat. While the pan is heating, chop the prosciutto into small slices. Add to the heated pan, and cook until crispy, but not burned.
Remove the prosciutto from the skillet, and set aside. Add the other tbsp of butter to the skillet. Dice the onion, and add to the skillet. Cook for approximately 5 minutes, or until the onion is translucent, and slightly caramelized.
While the onion is cooking, cut the avocados, and add both to a large glass bowl. Use a fork to smash the avocado. Add the garlic powder, salt, pepper, and chicken bone broth. Mix well. The avocado sauce should be thick like a batter.
Drain the zucchini noodles well. The best way to cook the zucchini is in a skillet. Add the drained zucchini noodles to the skillet with the onions. Cook for 1-2 minutes, or until zucchini is warmed through. After cooking the Zoodles, add the avocado sauce to the skillet, as well as the ¼ cup of shredded parmesan cheese. Mix well, and cook for 2-3 minutes, or until the cheese is melted and the mixture is warm.
Serve the cooked Zoodles immediately, and top each bowl with the crispy prosciutto, and additional parmesan cheese.
