2 Green Thickie Recipes

Sometimes it can be hard squeezing in enough fruit and veggies into our kids’ diet; particularly the green stuff! This makes green thickies a great way to sneak a load of nutrients into their diet (and ours). Green Thickies are a healthy drink alternative for busy parents. They are a complete healthy meal drink like smoothies and include your daily servings of leafy greens, yet they still manage to taste delicious; a must in my household! Green Spa Thickie Recipe

This simple green thickie is the perfect summer smoothie to make when pineapple and cucumbers are in season. Since I have an abundance of mint in my backyard, this recipe allows me to use the freshest herbs! The cucumber and mint add a cool, refreshing flavor, while the pineapple sweetens the smoothie. Kale adds plenty of nutrients without bringing an overwhelming flavor along with it. Try this smoothie for breakfast or as a delicious and refreshing afternoon pick-me-up.

Ingredients
  

  • 1 cup pineapple chunks fresh or frozen
  • ½ small cucumber peeled
  • 1 cup fresh kale washed and chopped
  • 2 tbs fresh mint
  • ½ cup Chia seeds
  • 1 cup water

Instructions
 

  • Take first three ingredients and freeze them overnight.
  • Once frozen, add all ingredients to blender and blend on high speed until smooth (about 30 seconds). Enjoy!

Notes

These make great popsicles!

Creamy Orange and Avocado Green Thickie Recipe

This is a great smoothie to make when you are craving dessert. The avocado and banana add an incredibly smooth and decadent texture to the smoothie. Orange adds a sweet citrus flavour, while kale adds nutrients. If you can tolerate dairy, you can try adding one cup of vanilla Greek yogurt to add protein and turn this smoothie into a delicious orange creamsicle! You can also add a non-dairy yogurt.

  • 1 large orange peeled
  • 1 cup kale washed
  • 1 cup water
