This simple green thickie is the perfect summer smoothie to make when pineapple and cucumbers are in season.

Ingredients
  

  • 1 cup pineapple chunks fresh or frozen
  • ½ small cucumber peeled
  • 1 cup fresh kale washed and chopped
  • 2 tbs fresh mint
  • ½ cup Chia seeds
  • 1 cup water

Instructions
 

  • Take first three ingredients and freeze them overnight.
  • Once frozen, add all ingredients to blender and blend on high speed until smooth (about 30 seconds). Enjoy!
