RECIPE TIP: SOAK YOUR POTATOES BEFORE FRYING

One of the instructions for this recipe asks you to soak the potato slices before frying them. Why is it important to perform this task? After making this dish many times, I have found that potatoes that had been soaked before being fried ended up being crispier then if this step was skipped. The reason behind this is that the starch found in potatoes prevents a good crisp from forming.
