The thing I love most about this lemon recipe is what makes it so unique among other assorted lemon-flavoured treats. It’s the icing made with Deep Eddy Lemon flavoured vodka. Vodka is often the best choice when it comes to adding some alcohol and flavouring to your favourite dishes. Put a little bit of extra kick into a cocktail, or add some punch to a delicious dessert. By making my Lemon Bundt cake with Deep Eddy Lemon vodka infused icing, I create a flavour that reminds me of a candy-like lemon drop martini. It’s just the right thing to turn this springtime cake into an extra special treat.

This lemon drop bundt cake is the best-tasting lemon bundt cake there is, with or without the Deep Eddy Lemon icing. Make sure you use all-purpose flour and not cake flour for the perfect consistency. Lemon means freshness and so does spring. Maybe that’s why lemon is everywhere in the springtime, but I don’t want to look too far into it because I’m afraid it will suddenly go away. Nothing says springtime to me like an iced lemon bundt cake and I am so excited for the arrival of this vibrant time of year.

Lemon Drop Bundt Cake Recipe

Bundt Cake INGREDIENTS

  • 1 1/2 cups all purpose flour
  • 1/4 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 cup butter softened
  • 1 cup granulated sugar
  • 3 eggs, room temp
  • 1 tsp. vanilla
  • 1 tbsp. Lemon juice
  • Zest from one lemon
  • 1/3 cup sour cream

Lemon Glaze Ingredients

  • 1 1/2 cups powdered sugar
  • 1 Tbsp. lemon juice
  • 3 Tbsp. Deep Eddy Lemon Flavoured Vodka

  • Bundt pan
  • Medium bowl
  • Small Bowl
  • Stand mixer

How To Make the Lemon Bundt Cake

Preheat the oven to 350 degrees. Spray a bundt pan with non-stick baking spray.

In a medium sized bowl add the flour, baking soda, baking powder, and salt. Sift to combine.

In a bowl of a stand mixer, add the butter and sugar, and beat until creamy 1-2 minutes. Add in the eggs, vanilla, lemon juice, zest, and sour cream to the butter mixture and mix until combined. Add in the flour and mix until fully incorporated. Pour the batter evenly into your bundt pan.

Bake for 45-50 minutes or until golden brown. Remove from the oven and let cool.

How To Make The Lemon Glaze

In a small bowl add the powdered sugar, lemon juice, and liquor. Mix until combined.

Remove the bundt cake from the pan and place on a baking pan. Pour the glaze evenly onto the bundt cake.
