Salted Caramel Latte Cupcake

When the days come, and it is time to pay bills and get groceries, that is usually when my body decides to have an all night marathon turning me into a walking “mombie”. You know what that is right? It’s when a mom is so tired that she literally drags her feet around and quietly moans about her day. On the days that I have the most to do, that’s when my body decides to turn against me, making it impossible to make it through the day without a quick me up. Thank goodness for Starbucks, because they always come to the rescue when I need them the most.

At the drive through the other morning, ordering my Salted Caramel Latte, I was thinking about how delicious that would be if I turned it into a cupcake. I know their recipe is top secret and impossible to figure out, but after a few of my favorite latte’s, I kinda had a clue about how I could recreate this delicious taste at home and turn it into a cupcake. The first batch I made, there was just something missing and I couldn’t figure it out. My kids helped me, and my next batch was perfect. I am so happy to introduce you to my newest creation, the Salted Caramel Latte Cupcake.

This cupcake is pretty easy to make. I even include the recipe for my delicious frosting. Here are the ingredients you will need: 

CUPCAKE INGREDIENTS 

  • 1 1/4 cups all-purpose flour
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup firmly packed dark brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (room temp)
  • 2 large eggs (room temp)
  • 1 tsp vanilla extract
  • 1/4 cup whole milk
  • 1 TBSP Coffee flavouring
  • Sea salt
  • Caramel syrup

FROSTING INGREDIENTS 

  • 4 cups of powdered sugar
  • 2 sticks of softened butter
  • 2-3 teaspoons of vanilla
  • 1-2 tablespoons of milk
  • Caramel for drizzle on top
  • Sprinkle Sea salt on top of caramel drizzle 

We are going to make the cupcakes first and then follow with the frosting. They are very easy to make: 

CUPCAKE RECIPE

  • Preheat your oven to 350F.
  • Line a standard 12 cup cupcake pan with liners.
  • In a bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, beat the sugars and butter using an electric mixer. You want them to be light and fluffy, which should take approximately 3 minutes if the mixer is on medium-high speed.
  • Then, add in the eggs, milk and vanilla until combined. Add in the flour mixture.
  • Fill the prepared cupcake cups and bake for 20 or so minutes until you can insert a toothpick and it comes out clean.
  • Caramel squeeze desired amount into cupcake mix while in the cupcake pan stir with end of spoon lightly.

FROSTING INSTRUCTIONS

1. Add powdered sugar to mixing bowl.
2. Add softened sticks of butter
3. Add vanilla.
4. Add 1 tbsp of milk.

5. Beat on low until powdered sugar is incorporated. Then move mixer up to medium-high speed. 6.Scrape sides and bottom of bowl often. When completely mixed the frosting may appear dry.
7. Add more milk, a little bit at a time until frosting is the proper consistency.
