Before you attempt to make homemade caramels in your kitchen, it’s critical that you purchase a candy thermometer. You just need to be able to clamp it onto your saucepan. Tracking the temp of your boiling candy is crucial when making this recipe.

Once you know how to make these, the homemade caramels make a perfect base for other candies. You can add walnuts or pecans and melted chocolate to create your own freshly made turtles. it all starts with that delicious, chewy, and stretchy caramel that you make at home in your very own kitchen.
Cutting Your Homemade Caramel
When you cut your caramel into pieces, make sure you get a nice clean cut. Carefully consider the size of the pieces or the quantity of caramels you want to have. Then cut a grid using the tip of a very sharp knife. Start in the back and then pull the knife toward you, cutting strips out of the sheet of caramel. Then rotate the sheet and cut again at your desired thickness.

Ingredients
- 1 cup of butter
- 4.5 cups of white sugar
- 1.5 light corn syrup
- 3 cups of whipping cream

- Wax paper to roll
- 9×12 pan
- Candy Thermometer
How To Make The Homemade Caramels
- 1. Melt sugar and corn syrup in a heavy saucepan. Bring to a boil and boil for 5-7 minutes.
- 2. Melt butter and mix with whipping cream.
- 3. Mix very slowly into the boiling mixture ¼ cup at a time. Stir continuously.
- 4. Bring back to a boil and boil until temperature reaches 240 F.
- 5. Pour caramels into a 9×12 pan that is lined with parchment paper.
- 6. Place in fridge overnight.
- 7. Cut into pieces and then wrap in wax paper.
