Rolo Stuffed Chocolate Cookies

YUM is the first word that comes to mind when I look at these cookies! Let’s face it; any cookie stuffed with caramel has got to be a winner. If you happen to be a Rolo fan this treat is right up your alley.

Except for the candy itself, you probably already have all of these cookie-making ingredients in your pantry. The recipe is just a basic chocolate cookie with a rich and gooey surprise inside… perfect for when you’re craving something sweet. Seriously, I dare you to eat just one!

I was surprised to learn that Rolos have actually been around since 1937. Who knew, right? They were introduced in the UK by a company called Mackintosh’s. Before that, the same company was well known for their toffee treats. Rolo was a “spinoff” version of one of them.

Mackintosh’s eventually granted license to the New England Confectionery Company, which produced the Rolo brand in the United States. As of 1969, the Hershey Company took over production.

If you’re a Rolo aficionado, chances are you’re somewhat aware of all of the recipes that call for the candy. Performing a search will no doubt bring up ice cream options, muffin recipes, Rolo-infused yogurt, cookies (of course) and a whole lot more. And, don’t forget the now-famous McDonald’s Rolo McFlurry!

This particular candy is perfect for stuffing into cookies because of the way the caramel oozes when melted. It makes me think that popping one in a cup of steaming hot chocolate might result in the combination of chocolate and caramel goodness.

Rolo Stuffed Chocolate Cookies

Cookie Ingredients:

  • 2 1/2 cup flour
  • 3/4 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 1 cup unsalted butter, room temp
  • 2 tsp vanilla 
  • 2 eggs, room temp
  • 1 bag Rolo candy

Cookie Instructions:

  • Preheat oven to 375 degrees.
  • Line a cookie sheet with parchment paper.
  • Whisk together flour, cocoa powder, and baking soda together in a bowl.
  • Set aside.
  • Using an electric mixer beat both sugars and butter in a large bowl until smooth and creamy.
  • Add vanilla and eggs; beating well.
  • Slowly add flour mixture at one tablespoon at a time, stirring well into sugar mixture and egg mixture. Place the cookie dough into your refrigerator for about 15 minutes. 
  • Next, using a small ice cream scoop make the cookie dough into small balls.
  • Then place a Rolo candy into the center of the cookie dough ball.  
  • If your dough gets too sticky return it to your refrigerator to harden up slightly.Place each cookie ball onto the lined cookie sheet, about 2 inches apart.
  • Bake at 375 for 7-10 minutes or until the baked cookie is slightly cracked.
  • Allow the cookies to cool on the cookie sheet for about 2 minutes.
  • Then transfer cookies to a wire rack to cool completely.
