March is the perfect time to get in the kitchen and whip up something that honours the fun of St. Patrick’s Day! This Irish Apple Cake is just the recipe to try. It will become a family favorite for certain, and while it is the ideal dessert on March 17th, it is such a good cake that you will want to bake it year round.
Apple Cake Is So Flavourful
At my house, we love dessert! Cookies, pies and candies are always welcome here and I never bat an eye at a slice of cake. With that in mind, any time I can add fruit to the mix, I jump on it! This apple cake is moist and perfectly seasoned with ginger, allspice and nutmeg. While the apples certainly don’t make this cake ‘health food’, they do add a lot of flavour and texture! And a serving of fruit is always a good idea with your dessert.
Ingredients To Use
Granny smith apples are ideal to use in this recipe. They are perfect for baking. They have a great texture and a tartness that can really be enhanced with seasonings. These apples also keep their shape well and won’t turn to mush in the cake. If you don’t have granny smith, Honeycrisp is a great alternative apple for baking and retaining its shape in desserts. Be sure to use real butter in this recipe to give it a good flavour and consistency during the baking process. Margarine is not recommended for this recipe.

Irish Apple Cake Recipe
This ultimate Irish Apple Cake recipe is a family favourite, not only on St. Patrick’s day, but year round. A delicious moist cake made with granny smith apples. Your family will request seconds!
Ingredients
- 3 cups all-purpose flour
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1/4 tsp of ground ginger, nutmeg, and allspice
- 3/4 cup unsalted butter, cold, diced into small pieces
- 1 Cup and 2 Tbsp sugar, divided
- 1 1/2 lbs of granny smith apples (5 med)
- 3/4 cup milk
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
How To Make The Irish Apple Cake
- Preheat oven to 375 degrees.
- Butter and flour a 9-inch spring form pan then set aside.
- In a large mixing bowl whisk together the flour, baking powder, salt, ginger, nutmeg and allspice for about 20 seconds.
- Add the cut butter pieces and rub them into the mixture using your fingertips until it looks like fine crumbs.
- Stir in 1 cup sugar.
- Peel apples, slice in half, core and stem, layer apples on flat side, slice downward into pieces less than 1/4 inch thick.
- Dice the apple pieces into smaller chunks ( about 2 or 3 chunks per slice).
- Add the diced apples to the flour mixture.
- Toss well to evenly coat, work to separate any apples that have stuck together.
- In another bowl, whisk the milk, eggs and vanilla together until they are well combined.
- Pour the milk mixture over the apple and flour mixture.
- Wash your hands next then just toss until combined. Your batter will be slightly lumpy but that is okay …..just don’t over mix.
- Pour your batter into the prepared baking dish, spreading into an even layer.
- In a small stir 2 Tbsp sugar plus 1/2 tsp cinnamon to sprinkle evenly over the cake.
- Bake the cake in a preheated oven 45-50 minutes until a toothpick inserted into centre comes out clean.
- Now cool the cake for about 5 minutes on a wire rack.
- Remove the ring from the spring form pan allowing the cake to cool to your desired temperature.
- Drizzle with a caramel sauce and serve with ice cream. Enjoy!
