Bacon and Egg Cups Recipe ~ World Egg Day #Thankful4Eggs

World Egg Day is celebrated every year on the second Friday in October. On World Egg Day, events are held across the world celebrating the egg.  Share on Twitter why you’re thankful for eggs by using the hashtag #Thankful4Eggs.

On such a special day, I thought I would share one of my favourite egg recipes, the Bacon and Egg Cups. 

Ingredients

  • 8 eggs
  • 8 slices bacon
  • 1/2 cup of shredded cheese (less or more to taste)
  • salt
  • pepper

Directions

Preheat oven to 350 degrees.

Par cook the bacon slices by frying them for 5 minutes. Do not over cook. Remove from the skillet and drain on paper towels.

Using a muffin/cupcake pan, line the holes with a slice of bacon, pressing the bacon around the sides of the hole, not on the bottom.
 
Crack one egg into each hole (you can also scramble the egg).

Sprinkle with salt, pepper and cheese.

Bake at 350 degrees for about 15-20 minutes until the centers have set.

Carefully remove the bacon egg cups to a plate and serve immediately.
