On a hot summer day, there is nothing better than a refreshing salad. I love to make a spinach salad topped with fresh strawberries and nuts. While grocery shopping one day, I ran across an amazing deal on raspberries and I knew exactly what I wanted to try with them. Usually, I go pick my own raspberries, but I couldn’t pass up this deal. I headed and picked out some fresh spinach to make my Mouthwatering Raspberry Salad with Vinaigrette Recipe.
What I love most about this recipe is that it is super simple to make. The Vinaigrette can be prepared ahead of time and saved. It can also be prepared in bigger batches for an easy to serve brunch idea. Not only is this a great dish for lunch or even dinner, it would be perfect for brunch dates or even baby showers. This recipe is so versatile, you could add in your favorite nuts, dried fruits, special cheeses and more to create a unique salad every time.
For my Mouthwatering Raspberry Salad with Vinaigrette Recipe, you will need the following:
Ingredients
- 1/2 cup fresh or frozen (thawed) raspberries
- 2 tablespoons lemon juice
- 2 tablespoons red wine vinegar
- 1 teaspoon sugar
- Pinch of salt
- 1/4 cup canola oil
To make this Raspberry Salad with Vinaigrette is simple. Just follow these directions:
Directions
Place raspberries in a bowl and crush with a fork. (I used a potato masher) Whisk in remaining ingredients until well blended. Cover and chill. Whisk just before using.
Salad Ingredients
- Fresh Spinach
- 1/2 cup of pecans
- 1/2 cup of fresh raspberries
- 1/4 cup of Gorgonzola cheese
Directions
- Place the spinach in a bowl top with raspberries, pecans, and cheese.
- Top the salad with the Fresh Raspberry Vinaigrette.
