This blueberry orange muffin is a hand-held breakfast! This muffin recipe include real blueberries and orange zest for a burst of fruity flavour, while also using a healthy amount of yogurt. You can use any yogurt you like for the flavour or nutritional benefits of your choice, but I favour a simple vanilla flavoured yogurt in mine. Brown sugar adds some depth of flavour to this best blueberry orange muffin recipe which can whip up a quick batch of up to 18 medium-sized muffins.

These easy blueberry orange muffins are excellent when halved and served warm with a buttery spread on each open slice. However, you can also eat them whole, just as they are. - Makes: 15-18 medium muffins

Blueberry Orange Muffin Ingredients
- 2 cups of all purpose flour
- 1 tsp baking powder
- 2 tsp baking soda
- 1 tbsp vanilla extract (or any other extract)
- 2 eggs
- ½ cup of melted butter
- ¾ cup of brown sugar
- ½ cup of vanilla yogurt (you can also sub Greek yogurt, or any other flavour)
- ¼ cup of milk (you can also use plant based milk)
- 1 cup of frozen blueberries
- 1 orange zested
How to make Blueberry Orange Muffins
- Pre-heat oven to 425 degrees.
- In a large bowl, mix butter, sugar, yogurt, extract, milk, zested orange and eggs with a whisk. Whisk well until mixed.
- In a medium size bowl, add flour, baking powder and baking soda. Stir to combine with a whisk.
- Add dry ingredients to wet ingredients and mix.
- Gently add in frozen blueberries, fold in, and mix with a spoon. Don’t overmix.
- Place muffin liners into a muffin tray and scoop batter into the liners. Fill to ¾ way full for best results. Overfilling will create some spillage for this muffin recipe.
- Place in a 425 degree oven for 18-22 minutes or until a toothpick comes out clean.
- Remove the blueberry orange muffins from the oven and allow to cool on a cooling rack.
