These blueberry orange muffins are so moist and flavourful. They will become your family’s favourite breakfast. It’s hard to beat a hearty muffin for a quick calorie boost as you start the most important meal of the day.

Although there are plenty of grab-and-go breakfast ideas for hurried people with crazy schedules, my favourite is to have a tasty batch of blueberry orange muffins handy in the morning. These muffins are also nice just to savour and enjoy with a light/medium roast of coffee, or your favourite tea.

There are all kinds of ways to do breakfast because there are all kinds of ways we start our days. How late you are for work and what side of the bed you got up on play a huge part in how you breakfast. Despite being the most important meal of the day, breakfast is also the most skipped meal of the day. According to this article, “Is Breakfast In Canada In Crisis?”, 23% of Canadians say they skip breakfast at least one day during the work week and a further 11% say they don’t eat breakfast at all during the work week. That Doesn’t make sense!

Blueberry Orange Muffins are a Hand-Held Breakfast

This blueberry orange muffin is a hand-held breakfast! This muffin recipe include real blueberries and orange zest for a burst of fruity flavour, while also using a healthy amount of yogurt. You can use any yogurt you like for the flavour or nutritional benefits of your choice, but I favour a simple vanilla flavoured yogurt in mine. Brown sugar adds some depth of flavour to this best blueberry orange muffin recipe which can whip up a quick batch of up to 18 medium-sized muffins.

Enjoy at Home or On-the-Go

These easy blueberry orange muffins are excellent when halved and served warm with a buttery spread on each open slice. However, you can also eat them whole, just as they are. Those popping real blueberries will delight you with every moist bite you take. With these healthy blueberry orange muffins at your disposal, you will never have to miss breakfast on an important day again. Plus, one batch provides two weeks’ worth of muffins!

  • Bake time: 18-22 minutes
  • Makes: 15-18 medium muffins

Blueberry Orange Muffin Ingredients

  • 2 cups of all purpose flour
  • 1 tsp baking powder
  • 2 tsp baking soda
  • 1 tbsp vanilla extract (or any other extract)
  • 2 eggs
  • ½ cup of melted butter
  • ¾ cup of brown sugar
  • ½ cup of vanilla yogurt (you can also sub Greek yogurt, or any other flavour)
  • ¼ cup of milk (you can also use plant based milk)
  • 1 cup of frozen blueberries
  • 1 orange zested

How to make Blueberry Orange Muffins

  1. Pre-heat oven to 425 degrees.
  2. In a large bowl, mix butter, sugar, yogurt, extract, milk, zested orange and eggs with a whisk. Whisk well until mixed.
  3. In a medium size bowl, add flour, baking powder and baking soda. Stir to combine with a whisk.
  4. Add dry ingredients to wet ingredients and mix.
  5. Gently add in frozen blueberries, fold in, and mix with a spoon. Don’t overmix.
  6. Place muffin liners into a muffin tray and scoop batter into the liners. Fill to ¾ way full for best results. Overfilling will create some spillage for this muffin recipe.
  7. Place in a 425 degree oven for 18-22 minutes or until a toothpick comes out clean.
  8. Remove the blueberry orange muffins from the oven and allow to cool on a cooling rack.
