Turkey Taco Party Cups Recipe

Ingredients
  • 2 lbs ground turkey
  • 1 tbsp olive oil
  • 1 cup minced onion
  • Salt and pepper to taste
  • 2 tbsp taco seasoning
  • 1 cup crushed tomatoes
  • 3 large tortillas cut into quarters
  • 1/2 cup sour cream
  • 6 cherry tomatoes sliced
  • 12 jalapeno slices optional
  • ½ cup Mexican cheese optional
Instructions
  1. Heat olive oil over medium heat in a skillet
  2. Sauté onions for 4-6 minutes until lightly browned.
  3. Add ground turkey. Season with salt and pepper to taste. Sprinkle with taco seasoning.
  4. Cook until lightly browned and cooked through, 8-10 mins.
  5. Add tomatoes and stir to combine. Cook an additional 2 minutes.
  6. Set aside to cool.
  7. Spray a muffin tin with non-stick cooking spray.
  8. Take each piece of tortilla and press into muffin cup to create a cup.
  9. Bake for 10-12 minutes until browned and crispy.
  10. To assemble: place 1 1/2-2 tbsp of ground turkey mixture into each cup. Top with 1-1 1/2 tsp sour cream, cherry tomato slices, jalapeño slices and cheese. Serve at room temperature.
Recipe Notes

TIP: You can make the ground meat up to 3 days ahead and store in the refrigerator. Feel free to serve with alternate toppings; shredded lettuce, avocado pieces, cheddar cheese or salsa.

    NOTE: After cooking, keep turkey hot (above 140°F (60°C)) or refrigerate (below 40°F (4°C)). DO NOT LEAVE TURKEY AT ROOM TEMPERATURE FOR MORE THAN 2 HOURS!!!..thats the most important tip I found on the web site, esp for young people who might not have ever had anything to do with the whole turkey process.
