In a mixing bowl, cream together the butter and sugars until light and fluffy.
Add in the egg and mix.
Add flour, vanilla, baking soda & chocolate chips and mix.
Form 1 ½ inch size cookie balls and set on a baking sheet lined with parchment paper.
Add M&M’s on top of each cookie.
Bake for 8-10 minutes, or until the edges turn a light golden colour.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

STORAGE TIPSTo keep your M&M cookies fresh and tasty, store them in an airtight container at room temperature. They will stay fresh for several days, but chances are they will be devoured long before then! If you have any leftovers, you can also freeze these cookies for 3 months.VARIATIONS
