Carrot Cake Bars

Are you looking for a new springtime treat? Look no further. These carrot cake bars are super moist and easy to prepare. They have the right amount of spice and nuts, just like a classic carrot cake, but in bar form.

The difference between a carrot cake and carrot cake bars is basically in the pan you use. When we make cakes, we tend to use round or square pans. If you are making bars then it is better to use a long rectangular pan.

Another name for these carrot bars is Carrot Cake Blondies. What makes them blondies? Well, it has to do with the type of sugar you use. With blondies, you usually just use brown sugar and with most other cakes will use regular sugar or a mixture of both. What truly makes them blondies is to mix cream cheese through the batter. The texture will be like a brownie.

Carrot Cake Bars with Cream Cheese Frosting

Every cake bar deserves a delicious topping of some sort. Usually, they have a frosting or glaze the pairs well with the flavour of cake. Carrot cake bars with cream cheese frosting is the perfect match. Adding the frosting to the carrot cake bars is a fun way to serve veggies to your family that they will truly enjoy.

This recipe for carrot cake bars makes thick, moist and tastes like carrot cake. These homemade bars are made from scratch and super easy! Topped with creamy homemade cream cheese frosting and chopped pecans!

Carrot Cake Bar Ingredients

  • 1 1⁄2 cup unsalted sweet cream butter, melted
  • 2 1⁄2 cup light brown sugar, packed
  • 2 large eggs
  • 4 tsp pure vanilla extract
  • 1 1⁄2 cup finely grated carrots
  • 2 1⁄2 cup flour
  • 1/4 tsp ground ginger
  • 1 tsp kosher salt
  • 1 tsp ground cinnamon
  • 1 cup finely chopped pecans

Cream Cheese Frosting

  • 1 – 8 oz cream cheese, softened
  • 1⁄2 cup unsalted sweet cream butter, softened
  • 2 1⁄2 cup powdered sugar
  • 2 tsp pure vanilla extract
  • 1 cup finely chopped pecans

Kitchen Tools Needed

  • 9×13 baking dish
  • Whisk
  • Standing mixer with a paddle attachment
  • Bowls

How to Make Carrot Cake Bars

Preheat the oven to 350 degrees and spray a 9×13 baking dish with pam baking spray and line the bottom with parchment paper to insure no sticking happens while baking.

Using a medium bowl, whisk together the flour, ginger, cinnamon and salt until combined.

Using a medium pot, melt the butter. Once the butter is melted whisk in the light brown sugar and regular sugar until combined, melted and smooth. Allow to cool for 15 minutes.

Gradually mix in the eggs, vanilla and grated carrots into the melted butter mixture.

Gradually whisk in the dry ingredients into the wet and mix until a thick batter starts to form. Gently fold in 1 cup chopped pecans.

Scoop the batter into the tray and spread evenly. Bake in the oven for 20-25 minutes or until a toothpick comes out clean. Allow to cool.

How to make the Cream Cheese Frosting

Using a standing mixer with a paddle attachment, cream together the cream cheese and butter until light and creamy. Gradually beat in the powdered sugar and vanilla until combined, thick and smooth.

Spoon the frosting onto the cooled carrot cake bars and spread evenly. Sprinkle the remaining finely chopped pecans over the frosting. Allow the frosting to set before cutting the carrot cake into bars.
