Preheat your oven to 400 degrees
Wash your potatoes to get the dirt off them and then pat dry them with a paper towel.
Place potatoes on the baking sheet fitted with parchment paper
Poke holes using a fork in your potatoes and then place in the oven for 1 hour until cooked throughly
Using the skillet pan, fry up your bacon to your liking.
Once cooked place on a plate to cool
Chop up your bacon to get 1 1/2 cup.
In a large mixing bowl, add the cubes of butter, bacon and sour cream
Remove the potatoes from the oven and reduce the oven temperature to 350 degrees
Cut the potatoes in half and scrap out the insides and place into the large mixing bowl
Place the hollowed potatoes back onto the baking sheet
Using a masher, mash the potatoes, butter, bacon and sour cream together until slightly combined
Add the cheese and milk and mix until thoroughly
Once mixed well, scoop filling back into the potatoes and top with cheese
Place back into the oven for 15-20 minutes until potato is warm and cheese is melted
Drizzle the sriracha and top with sour cream
