Leave the rinds on the the orange and the peels on the apple, wash the fruits, and cut them into thin slices.
Place all the ingredients in a large pot. Stir briefly to combine.
Heat over low heat. Allow it to simmer for at least 30 minutes to 3 hours, but not to boil. Avoid letting it bubble as you don’t want to boil off the alcohol.
After it comes to a simmer, put the heat on the lowest setting to keep warm.
Use a fine mesh strainer to stain, and after, remove and discard the orange and apple slices, cloves, cardamon, cinnamon sticks, star anise, cloves, and allspice. I strain, but add fruit slices, 1 star anise, and 1 cinnamon stick in the glass.
Ladle the mulled wine into clear glass mugs.
Serve warm and garnish with more orange and apples slices and cinnamon sticks.
