Equipment

  • 2 Large mixing bowls
  • 1 Kettle
  • 6 Cups

Ingredients
  

Lemon Layer

  • 1 box lemon jello
  • 2 tsp unflavoured gelatin
  • ½ cup boiling water
  • ½ cup ice

Cream Layer

  • ¾ cup yogurt
  • ½ cup boiling water
  • 1 cup ice
  • 2 packages unflavoured gelatin

Instructions
 

  • In a large bowl mix together the lemon jello and gelatin. Add in ½ cup of boiling water and mix well.
  • Add in ½ cup of ice and stir until melted.
  • Add the first layer of lemon jello to your desired cups.
  • Place in fridge to set for 45 minutes.
  • Prepare the cream layer by mixing yogurt, gelatin, and ½ cup of boiling water and stir to combine. Add the ice and stir until melted.
  • Once the jello has set, pour your layer of cream to your desired thickness. You will have left over creamy mixture, just set it aside in the fridge.
  • Repeat lemon layer and cream layer until the cup is full.
  • Chill the Lemon Jello Parfait in the refrigerator until ready to serve.

Notes

NOTE
If you want 3 layers you’ll need to do these steps 3 times.
If your remaining cream layer sets up while you are pouring the jello layer, simply warm it on the stove gently to a melt to continue to use.
