Chocolate Eggnog Cupcakes
Spread some holiday cheer with a special treat like these Chocolate Eggnog cupcakes. Enjoy them with a cup of homemade eggnog.
Equipment
- 1 line pan with cupcake liners
- 1 Standing mixer
- 1 Piping bag with star tip
Ingredients
Cupcake Ingredients
- 1/2 cup unsalted butter softened
- 2 cups sugar
- 4 oz chocolate chips
- 4 eggs
- 1 cup oil
- 1 tsp vanilla
- 2 cups flour
- 1/2 tsp sea salt
- 1 cup cocoa
- 1 cup Eggnog
- cinnamon to sprinkle
Frosting
- 1 cup unsalted butter
- 3 cup powder sugar
- 1 tsp cinnamon
- 1 tsp nutmeg
- 3-5 TBSP heavy whipping cream
Instructions
Cupcake Directions
- Preheat oven to 350
- Melt the chocolate in a double boiler and remove as soon as it's melted or in the microwave in a microwavable safe bowl 30 seconds at a time, set aside until it's cool to touch.
- Line pan with cupcake liners
- In a standing mixer, beat the butter and sugar until fluffy
- Add in the melted chocolate.
- Add in the eggs, one at a time until fully mixed.
- Add in the oil and vanilla.
- Sift the flour, salt and cocoa in another and then add to the wet ingredients.
- Mix in the eggnog until combined.
- Fill liners half way and bake 21 minutes.
Frosting Directions
- Combine all ingredients into a standing mixer and mix until stiff peaks form.
- Pipe the frosting with your favourite star tip (I recommend Wilton 2D or Wilton 1M tip) and swirl the frosting onto cooled cupcakes and sprinkle cinnamon on top.
Notes
Frosting Tip
Twist the open end of the pastry bag and squeeze the frosting to the tip. Start at the outer edge of each cupcake moving in a circle inward to the centre of the cupcake.Nutrition
