Ingredients
  

  • 3 pounds pork tenderloin cut into chunks or strips
  • 3 tbsp brown sugar
  • 1 tsp salt
  • 1 envelope taco seasoning
  • 1 cup salsa
  • 1 tbsp olive oil
  • 1 cup beef broth

Instructions
 

  • Slice pork tenderloin into cubes or strips. Toss salt and brown sugar with the pork.
  • Turn on the instant pot and select the sauté function. Sauté the pork for about 5 minutes or until it is brown on all sides. Add beef broth to the pork and seal the instant pot.
  • Select the manual setting and set the timer for 40 minutes. It will take about ten minutes before the timer starts to count down. When the timer beeps, quick release the steam.
  • Using a serving spoon or fork, shred the pork. It should be very tender and want to fall apart. Add the cup of salsa and envelope of taco seasoning and stir. Place the lid on the instant pot and allow the tacos to rest for about 5 minutes.
  • Serve on soft corn tortillas or over nachos.
