Ingredients

I used PC Lemon Meringue Dessert Cookies
Instructions
Step 1: Let ice cream melt slightly until it is able to be mixed with the lemon zest and lemon juice.
Step 2: Mix well and then spread onto a parchment lined tray.
Step 3: Freeze overnight
Step 4: When you are ready to assemble the ice cream sandwiches cut out circles of ice cream and then place it between the cookies.
Step 5: Place cookies back in freezer until ready to serve.
Notes
Be sure to not stack them on top of each other as they may stick to each other.
