Ingredients

  • 3 cups dark rum
  • 1 1/2 cups sugar
  • 1 1/2 cups water
  • 2 1/2 cups fresh lime juice
  • 1 cup grenadine
  • 1 teaspoon bitters
  • 1/4 teaspoon ground nutmeg
  • 2-4 lbs food grade dry ice

Instructions

  • In a small pot, mix sugar and water together.
  • Boil until dissolved, and let cool.
  • In a large punch bowl, pour in the cooled sugar syrup.
  • Add the rum, lime juice, grenadine, bitters and nutmeg to the sugar syrup and mix together well.
  • Using tongs, add the dry ice to the room temperature brew.
  • Ladle the brew into glasses, leaving the dry ice in the punch bowl so that it will continue to create bubbles and fog.

Notes

Do not mix the dry ice with regular ice, and do not eat the dry ice or touch it bare-handed. Dry ice is safe to use in drinks as long is it is labeled food grade.
Break the dry ice into large pieces using a mallet or other tool. Be careful that you use gloves when handling it, since it can cause burns if it comes into contact with your skin.
