Ingredients

Shrimp

  • 1 lb of cooked and peeled shrimp you can also use raw shrimp, but you will have to add a few extra minutes to cook it
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Salad

  • 3 slices of cooked bacon crumbled
  • 2 eggs hard-boiled
  • 5 cups Romaine lettuce leaves washed and dried
  • 1 cup cherry tomatoes halved
  • 1 cup sweet corn
  • 1 avocado sliced
  • 6 oz. blue cheese crumbled
  • 1 cup croutons

Dressing

  • 1/2 cup mayonnaise or sour cream
  • 1/4 cup shredded Parmesan
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  • Start by cooking the shrimp. I like to use a non-stick grill pan for this. However, you can easily fry it as well. Just mix the shrimp with olive oil, lemon juice, garlic, salt, and pepper.
  • Then, cook it quickly on the grill or skillet for about 4-5 minutes.
  • Make the dressing by adding all the dressing ingredients together. You can use a blender or a fork to combine them, until the desired consistency.
  • Lastly, assemble the salad. In a large bowl. Add lettuce, tomatoes, cheese, and half of the croutons. Then, toss to combine. Top with shrimp, bacon, avocado, corn, and eggs. Garnish with the freshly made dressing on top. Add the remaining croutons.
  • Serve fresh.

Notes

RECIPE TIPS: You can make this salad with other proteins. For example, feel free to swap the shrimp with chicken breast or turkey. For a vegetarian version, skip the shrimp all together. Also, you can use other vegetables on hand. You can add beans, bell peppers, shallots, mixed greens, cucumber, etc.
STORAGE: To store it, use an airtight container, and refrigerate for up to 2 days.
