This Shrimp Cobb Salad is a healthy and flavourful dish that is loaded with shrimp, veggies, and topped with a delicious, lemon-based dressing. It is a must-try summer salad, that will be loved by everyone!
1lbof cooked and peeled shrimpyou can also use raw shrimp, but you will have to add a few extra minutes to cook it
1tablespoonolive oil
2tablespoonslemon juice
1teaspoongarlic powder

3slicesof cooked baconcrumbled
2eggshard-boiled
5cupsRomaine lettuce leaveswashed and dried
1cupcherry tomatoeshalved
1cupsweet corn
1avocadosliced
6oz.blue cheesecrumbled
1cupcroutons
Dressing
1/2cupmayonnaise or sour cream
1/4cupshredded Parmesan
2tablespoonsolive oil
1clovegarlicminced
2tablespoonslemon juice
Salt and pepperto taste
Instructions
Start by cooking the shrimp. I like to use a non-stick grill pan for this. However, you can easily fry it as well. Just mix the shrimp with olive oil, lemon juice, garlic, salt, and pepper.
Then, cook it quickly on the grill or skillet for about 4-5 minutes.
Make the dressing by adding all the dressing ingredients together. You can use a blender or a fork to combine them, until the desired consistency.
Lastly, assemble the salad. In a large bowl. Add lettuce, tomatoes, cheese, and half of the croutons. Then, toss to combine. Top with shrimp, bacon, avocado, corn, and eggs. Garnish with the freshly made dressing on top. Add the remaining croutons.
Serve fresh.

RECIPE TIPS: You can make this salad with other proteins. For example, feel free to swap the shrimp with chicken breast or turkey. For a vegetarian version, skip the shrimp all together. Also, you can use other vegetables on hand. You can add beans, bell peppers, shallots, mixed greens, cucumber, etc.STORAGE: To store it, use an airtight container, and refrigerate for up to 2 days.
