Delicious Breakfast Egg Muffins

  • 1 cupcake pan
  • pam spray
  • 3 cup of frozen shredded hash browns
  • 1/2 cup flour
  • 3 TBSP vegetable oil
  • 2 cup chopped ham
  • 12 Eggs


  • Preheat oven to 400 degrees
  • In a large mixing bowl, combine the hash browns, flour, and oil
  • Mix until combined
  • Spray your cupcake tin and spoon hash browns into each pan about 3/4 full
  • Bake in the oven for 30 minutes
  • Once the 30 minutes is up, pull out and using the back of the spoon, make a cavity for the ham.
  • Crack one egg into each of the hash browns
  • Place back into the oven for 10-15 minutes or until the eggs are cooked
  • Let cool for 5 minutes before serving!
