Bacon and Egg Cups

  • 8 eggs
  • 8 slices bacon
  • 1/2 cup of shredded cheese less or more to taste
  • salt
  • pepper


  • Preheat oven to 350 degrees.
  • Par cook the bacon slices by frying them for 5 minutes. Do not over cook. Remove from the skillet and drain on paper towels.
  • Using a muffin/cupcake pan, line the holes with a slice of bacon, pressing the bacon around the sides of the hole, not on the bottom.
  • Crack one egg into each hole (you can also scramble the egg).
  • Sprinkle with salt, pepper and cheese.
  • Bake at 350 degrees for about 15-20 minutes until the centers have set.
  • Carefully remove the bacon egg cups to a plate and serve immediately.
