  • 1 cookie sheet fitted with parchment
  • 1 bag of Tortilla Chips
  • 1 cooked whole Chicken shredded
  • 1 can of Black Beans drained
  • 1 can of Corn drained
  • 1/2 onion diced
  • 1 to mato diced
  • 1 avocado diced
  • 1 cup cilantro leaves chopped
  • 1 Block of Monterey Jack Cheese shredded


  • 1. Preheat oven to 350 degrees
  • 2. Pour the bag of the tortilla chips onto the cookie sheet
  • 3. Evenly spread out the chicken on top of the chips
  • 4. Sprinkle the black beans and corn all over the chicken
  • 5. Fully cover the chicken, beans and corn with the cheese
  • 6. Sprinkle the onion and tomatoes and cilantro on top of the cheese
  • 7. Place into the oven for about 10 minutes or until the cheese is melted
  • 8. Once melted, pull out of the oven and let cool for 2 minutes.
