We started getting our Christmas decorations out in November this year. We have so many activities and outings planned every weekend in December that I did not have a choice. The good part is that I am now ready for the holiday season! With decorations comes baking Christmas cookies, meat pies, meatballs stew, and Stewed Pig’s Feet. Can you ever tell that we are a French Canadian family! We also like to drink eggnog, so why not bake my favourite chocolate cupcakes with eggnog for a deliciously sweet Chocolate Eggnog Cupcakes for dessert at Christmas!
I absolutely love these chocolaty cupcakes and so did my family. I can’t wait to make them again!

The Best Chocolate Eggnog Cupcakes Recipe
For this recipe, you will need the following ingredients:
Cupcake Ingredients
- 1/2 cup unsalted butter, softened
- 2 cups sugar
- 4 Oz chocolate chips
- 4 eggs
- 1 cup oil
- 1 tsp vanilla
- 2 cups flour
- 1/2 tsp sea salt
- 1 cup cocoa
- 1 cup Eggnog
Cupcake Directions
- Preheat oven to 350
- line pan with cupcake liners
- In a standing mixer, beat the butter and sugar until fluffy
- Melt the chocolate in a double boiler, set aside until its cool to touch.
- Add in the butter and sugar.
- Add in the eggs, one at a time until fully mixed
- Add in the oil and vanilla
- Sift the flour, salt and cocoa in another and then add to the wet ingredients.
- Mix in the eggnog until combined.
- Fill liners half way and bake 21 minutes.
Frosting
- 1 cup unsalted butter
- 3 cup powder sugar
- 1 tsp cinnamon
- 1 tsp nutmeg
- 3-5 TBSP heavy whipping cream
Frosting Directions
- Combine all ingredients into a standing mixer and mix until stiff peaks form
- Pipe onto cooled cupcakes and sprinkle cinnamon on top.
Makes 24 cupcakes

These cupcakes sound good. At this time of year I really enjoy a Christmas pudding (Plum pudding) literally swimming in custard, yummy but oh so filling. 🙂
