Pink Marshmallow Fruit Salad

February is the month of love, hearts, and kisses! As a child, I couldn’t wait to receive homemade Valentine’s cards from my friends at school with cinnamon heart candies. I also remember crafting heart shaped cards and gifts for my parents. I still enjoy preparing a special treat for Valentines’ Day such as a superb festive table dress up in red and white, a yummy dessert, or succulent main course. Ever since the kids were born, we celebrated this day as a family with a special meal. My husband always brings home a beautiful dozen of red roses as a centerpiece for the dining room table and chocolates for an after dinner treat. To add some love ambience, we decorate the living room with a few heart shaped decorations and candles.

I find certain foods are well served and more representative for Valentine’s Day, like a Strawberry Shortcake, a red velvet cupcake, or any dessert made or topped with whipped cream, the sensual treat of all!  I love whipped cream and you will always find a Gay Lea Real Whipped Cream Half the Fat in my refrigerator. Not only is it made with real cream, it’s also ready to use and stays fresh. It’s amazing on top of a butterscotch pie, fresh fruits, a Trifle, and a hot chocolate!

One of my favourite recipes for the cold winter months is a Hot Cocoa beverage that the whole family enjoys after a hockey game or while watching a movie on Valentine’s Day!

Hot Cocoa Beverage


  • 1 tablespoon of cocoa
  • 2 tablespoons of sugar
  • 1 tablespoon of cold milk
  • 1 cup of hot milk
  • Mini Marshmallows
  • Gay Lea Real Whipped Cream
  • Cinnamon powder


  1. Blend 1 tablespoon of cocoa with 2 tablespoons of sugar
  2. Mix in 1 tablespoon of cold milk
  3. Stir into 1 cup of hot milk
  4. Add mini marshmallows to taste
  5. Top with Gay Lea Real Whipped Cream
  6. Sprinkle with cinnamon powder

For this Valentine dinner, I will make a Pink Marshmallow Fruit salad for dessert! I used a can of fruit cocktail, but you can also make the recipe with fresh fruits as you will savour more crunchy bites. Pink Marshmallow Fruit Salad #GayLeaFoods


  • 2 cups of miniature white or coloured Marshmallows
  • 1 big can Fruit Cocktail (796 ml)
  • 3 cups of Gay Lea Real Whipped Cream
  • 4 Maraschino Cherries per serving dish
  • Red food coloring


  1. Drain Fruit Cocktail, remove cherries, and place in a bowl.
  2. Add white or coloured Marshmallows to the bowl.
  3. Add Gay Lea Real Whipped Cream to the bowl.
  4. Stir to mix all ingredients.
  5. Add 1 drop of red food colouring
  6. Stir to mix all ingredients.
  7. Cut Maraschino Cherries in half and arrange them in a circle on top of salad to decorate.
  8. Transfer to a serving dish.
  9. Refrigerate for at least 1 hour.
