Since May is National Salad Month, it’s time to celebrate the salad and reap the benefits of eating healthy! Many Canadians don’t eat enough vegetables, so what better time to add more salads to your meals than during National Salad Month.

Now more than ever, Canadians are reading food labels to ensure that the products they buy have recognizable ingredients. Canadians are seeking more simplicity and more vegetables in their diet and one solution, to put it simply, are NEW Simply Dressed® salad dressings.

To top off your salad, why not try one of the new Marzetti®™ Simply Dressed® refrigerated salad dressings made with extra virgin olive oil, sea salt and canola oil. These dressings do not contain preservatives, trans fat, high fructose corn syrup, added MSG or artificial flavours.

Simply Dressed_Apple Chicken Salad (Small)

Crunchy Apple Chicken Salad

Crunchy, sweet and savory. This delicious salad has it all. Just combine Simply Dressed® Balsamic Salad Dressing with chicken, Granny Smith apples, celery, dates, pecans, cabbage and salad greens.

Prep Time: 25 minutes Serves: 4 to 6

INGREDIENTS

  • 1/2 cup Simply Dressed® Balsamic Salad Dressing
  • 1/2 cup pecans
  • 2 cups shredded cooked chicken meat
  • 1 large Granny Smith apple, diced
  • 1/2 cup chopped celery
  • 1/2 cup chopped dates or favourite fruit
  • 2 cups chopped cabbage
  • 4 cups mixed salad greens
  • 1/4 cup peels of aged white cheddar cheese
  • salt and pepper to taste

PREPARATION

  • Preheat oven to 350 degrees F.
  • Place nuts on a baking pan and bake 5 to 7 minutes or until nuts are toasted. Cool and chop.
  • In a large bowl, combine Simply Dressed Balsamic Salad Dressing, chicken, apples, celery, dates, pecans and salt and pepper. Add cabbage and salad greens and gently toss.
  • Top salad with cheese and serve.

Simply Dressed_Arugula Pomegranate Salad (Small)

 Arugula and Fennel Pomegranate Salad

A breaded, browned piece of goat cheese makes an interesting centerpiece for a salad of arugula, fennel, onion, pomegranate seeds and Simply Dressed® Pomegranate Salad Dressing.

Prep Time: 25 minutes Serves: 6

INGREDIENTS

  • 1/2 cup Simply Dressed® Pomegranate Salad Dressing
  • 1 large fennel bulb, outer layer removed
  • 1 cup panko (Japanese) bread crumbs
  • 6 oz. goat cheese, cut into 6 discs
  • 2 tbsp. olive oil
  • 8 oz. arugula
  • 1 small sweet onion, sliced thinly
  • 1/2 cup pomegranate seeds or dried cranberries
  • 1/3 cup shelled pistachios

 PREPARATION

  • Cut fennel into thin pieces. Set aside. Place panko in a shallow dish. Roll each piece of goat cheese in panko and transfer to a plate. Heat oil over medium-high heat in medium size skillet. Add goat cheese and brown cheese on each side, about 1 to 2 minutes per side. Transfer cheese to a plate and keep warm.
  • In a large mixing bowl, combine fennel, arugula, onion and Simply Dressed® Pomegranate Salad Dressing; toss gently. Divide salad mixture and arrange on individual plates. Sprinkle each salad with pomegranate seeds and pistachios.
  • Place warm goat cheese on top of each salad. Serve.

 

Simply Dressed_Chickpea Salad (Small)

Exotic Vegetable and Chickpea Salad

Wow family and friends with the exotic flavours of this salad, which combines cauliflower, golden beets, cumin, chickpeas, cucumber, feta and Simply Dressed® Greek Feta Salad Dressing.

Prep Time: 30 minutes Serves: 8 to 10

INGREDIENTS

  • 3/4 cup Simply Dressed® Greek Feta Salad Dressing
  • 4 cups fresh cauliflower florets
  • 2 tbsp olive oil
  • 2 large golden beets
  • 1/4 tsp ground cumin
  • 1/2 cup roasted red pepper slivers
  • 1 cup fresh parsley leaves
  • 1 cup diced cucumber
  • One (15 oz.) can chick peas, rinsed & drained
  • 1/2 cup slivered and pitted kalamata olives
  • 1/4 cup diced red onion
  • 3 oz. crumbled feta cheese

 PREPARATION

  • Preheat oven to 400° F. Combine cauliflower and olive oil and place on a baking sheet. Roast cauliflower 15 to 18 minutes or until cauliflower is golden and tender (times will vary depending on size of cauliflower pieces).
  • Place beets in a saucepan and cover with water, bring to a boil and simmer until tender, about 20 to 30 minutes (times will vary depending on size of beets). Cool slightly, peel and dice.
  • In a large bowl, combine Simply Dressed® Greek Feta Salad Dressing with ground cumin.
  • Add all remaining ingredients and toss well.
  • The salad is best served right after it is tossed.

 

Simply Dressed_Chopped Spinach and Cracked Wheat Minted Salad

Chopped Spinach, Mint and Cracked Wheat Salad

Bulgur wheat tossed in Simply Dressed® Pomegranate Dressing adds hearty goodness to a salad of chopped spinach, crumbled feta, mint, scallions and dried apricots.

Prep Time: 20 minutes Serves: 8 – 10

INGREDIENTS

  • 3/4 cup Simply Dressed Pomegranate Dressing
  • 1 cup bulgur wheat 1 1/2 cups boiling water
  • 1/2 cup almond slivers Salt and pepper
  • 1/2 cup dried apricots, diced into 1/4-inch pieces
  • 4 scallions, chopped
  • 1/2 cup chopped mint
  • 5 oz. chopped spinach
  • 4 oz. crumbled feta or halloumi cheese
  • 1/2 cup pomegranate seeds or dried cranberries Salt and pepper

 PREPARATION

  • Place the bulgur wheat in a bowl and pour the boiling water over it. Cover with plastic wrap and allow to stand at room temperature for 1 hour.
  • Preheat the oven to 350°F. Place almonds on a baking pan and bake 5 to 7 minutes or until nuts are golden brown. Cool.
  • Remove plastic wrap and fluff the bulgur wheat with a fork. Pour 1/2 cup Simply Dressed Pomegranate Dressing over bulgur wheat and mix. Season with salt and pepper to taste.
  • Add almonds and all remaining ingredients to the bulgur wheat. Drizzle the remaining 1/4 cup of dressing over all and gently toss. Serve.

    I am Caesar obsessed, it’s always been my favourite kind of salad – I find it so annoying that restaurants always charge an upgrade fee just to get my Caesar (I always pay it). When Caesar is not an option I love a good Ranch or coleslaw (what can I say? the nutritional value of my salads is always destroyed by my taste for delicious things). The vinaigrettes also look great, I love that they have unique flavours – would love to try them. And. . . I know someone I can give the Blue Cheese one to 😛 Thanks for offering this!!
