Growing My Own Basil & Tomato Basil Salad Recipe

I just love the idea of growing things in the summer.  I grew up with a huge backyard garden, and my parents just love to grow all their own vegetables and then put together fabulous summery salads.  These days their garden is enormous, and seems to grow a bit bigger every year.  I have always intended to duplicate their efforts, but I never seem to have enough time.  So over the years, I have started doing a much smaller container garden, just choosing a few plants to care for each year.  This year I have planted tomatoes and basil.  My basil is just so fabulous, and I have been using it every chance I get.  I find that a few basil leaves just makes everything taste better. I add it to all my salads, and my meat and fish dishes too.  The whole family gives basil a thumbs up which makes it even easier to use in everything.  Here is one of my favourite ways to use it:

Tomato Basil salad

Ingredients

  • Several large preferably fresh out of the garden tomatoes
  • Handful of fresh-picked basil leaves
  • Red onion, thinly sliced
  • Feta cheese, thinly sliced or crumbled
  • Olive oil
  • Fresh ground pepper
  • Fresh ground salt

Instructions

  1. Slice the tomatoes and place them in a single layer on a pretty summer plate. Sprinkle the red onion, feta cheese and basil leaves on top. I like to place them so each bite will get a cheese, basil leaf and onion. Drizzle with olive oil. Season with pepper and salt to taste. Enjoy!
