Chocolate Grasshopper Cookies

Chocolate Grasshopper Cookies


  • Cookie:
  • 1 box cake mix
  • 1/2 cup vegetable oil
  • 2 eggs
  • Peppermint Frosting:
  • 1/2 cup soft butter
  • 2 Tbs milk
  • 2 cups powdered sugar
  • 1 1/2 tsp peppermint extract
  • Green food colouring optional
  • Chocolate Topping:
  • 2 1/4 cup semi-sweet chocolate chips
  • 3/4 cup butter


  1. Step 1:
  2. Preheat oven to 350
  3. Mix cake mix, vegetable oil, and eggs togeter. do not follow instructions on the cake mix box
  4. Drop spoonfuls of dough onto baking sheet bake for 6 to 9 minutes.
  5. let cool completley
  6. Step 2:
  7. mix together all ingredients once all mixed spread on top of each cooled cookie
  8. Step 3:
  9. Melt chocolate chips and butter togeter and once melted spread on top of frosting. Put in fridge once cookies are done for about 10 minutes and ENJOY!!


Every year in the Murphy house my boys get all excited for St. Patrick’s Day. Why? Well Mr. Leprechaun leaves a treat for them. They are chocolate grasshopper cookies. Who can say no to a  sweet yummy cookie? It’s a real treat. Even though my boys  have never seen Mr. Leprechaun they do look forward to his cookies every year and are green with envy!

    I might have to call this recipe a Christmas one, by adding a red cherry or candy cane bit to the top! I haven’t tried these, but anything chocolate mint works for me!
