Cake Batter Ice Cream

 

While I do love making ice cream the old-fashioned way, it is just a ton of work. When my kids were little they loved helping me make ice cream and they felt great knowing they needed it. Now that we are all getting older, we prefer the instant gratification type of things. We still make ice cream, but now we do not do any more churning, and the ice cream still tastes fantastic. On my daughter’s last birthday, she requested a specific type of ice cream and, well, being a mom I had to deliver it for her. I would love to introduce you to my Easy No Churn Funfetti Cake Batter Ice Cream.

This recipe combines three of my favorite things; Funfetti, Cake Batter, and Ice Cream. What more could you really ask for in an easy to make sweet treat?! This recipe can be made in big batches for parties or you can half the recipe for more single size servings. Ice cream stands up very well in the freezer, so this recipe can even be made well in advance, as long as you promise not to eat it all before the big day.

You will not believe how easy it is to make ice cream! You will need the following ingredients to make my Easy No Churn Funfetti Cake Batter Ice Cream:

Ingredients:

  • 1 pint (2 cups) heavy cream
  •  1 (14 oz.) Sweetened Condensed Milk
  •  2 Tablespoons butter, melted
  • 1 cup yellow cake mix 
  • 1/4 cup rainbow sprinkles

It is so simple! Just follow these easy directions: 

Directions:

In Process 1

 

Using a mixer whip heavy cream to stiff peaks in a large bowl.

 

In Process 2

 

 

In a separate large bowl, whisk sweetened condensed milk, butter, cake mix and sprinkles.

 

In Process 3

 

Combine mixtures by folding in whipped cream with a rubber spatula.

 

In Process 4

 

Spread into a 2-quart container and cover. Freeze 6 hours or until firm.

 

In Process 5

 

Eat and store the reminder in the freezer.
