Easy No Boil Lasagna Recipe

At this time of year, I am just itching for spring and warmer temperatures. Somehow though, winter is lingering on and I am not quite in the mood for lighter spring fare just yet. Growing up, my parents didn’t cook a lot of the foods that my friends were eating at home. One thing that I am pretty sure they never made was lasagna. I absolutely love lasagna and it was one of the very first dishes I made on my own after moving out. I can still remember asking a co-worker for the recipe, and it was so easy to make and it turned out so well…20 years later I am still using the same little recipe card each time I make it. It is a staple in my house, especially in these cooler temps…

Easy No Boil Lasagna

Ingredients

  • 1 tbsp oil
  • 1 clove garlic minced
  • 1 28oz can tomato sauce
  • 1/2 cup water
  • 1 cup cottage cheese
  • 1 egg, slightly beaten
  • 1 tsp salt
  • 3/4 pkg of lasagna noodles, uncooked
  • 1 medium onion, chopped
  • 1 lb ground beef
  • 1 10oz can of sliced mushrooms
  • 1 tsp oregano
  • 1/3 cup parmesan cheese
  • 2 tbsp oil (for the cheese mixture)
  • 6 oz mozzarella

Instructions

  1. Saute onion and garlic in oil.
  2. Add meat and brown, then drain.
  3. Stir in tomato sauce, mushrooms and liquid, water and oregano.
  4. Bring to a boil, then remove from heat.
  5. Combine cottage cheese, parmesan, egg, oil and salt.
  6. Spoon 1/3 sauce into 9x13 dish.
  7. Cover with 1/3 lasagna noodles.
  8. Spread another 1/3 of sauce over and cover with another 1/3 of lasagna noodles.
  9. Spread cheese mixture over and cover with remaining noodles, then sauce.
  10. Top with mozzarella.
  11. Cover with foil and bake at 375 degrees for 45 minutes.
  12. Uncover and bake for another 15 minutes.
  13. Note - If needed, can be made without egg.
  14. If not using mushrooms, add just the liquid.

    I love making lasagna, it’s one of my favourites and I only use oven ready noodles even when I make it in the slow cooker, the only time I buy the noodles to boil is when I do the lasagna roll ups….anyways whatever you use it’s lasagna mmmmm

    I never boil my lasagna noodles any more. You just have to make sure that you use a bit more liquid for the noodles to absorb. I also make my lasagna in the slow cooker.

    I prefer my lasagna noodles to not be boiled ahead of time so this recipe is perfect!

    I love lasagne and if it’s this easy to make then I guess I should have a go 🙂 You do use simple normal lasagne leaves I presume.
