The snow is (finally) melting, which means BBQ season has returned! I love my BBQ and try to cook with it as much as possible. One of my favourite vegetables to grill is asparagus! Here is an easy yet tasty asparagus recipe to warm up your grill in time for BBQ season!
- 1 bunch of asparagus
- Splash of extra-virgin olive oil
- 1 whole lemon, rind and juice
- 2 tbsp of grated Parmesan cheese
- Salt and pepper to taste
- Pre-heat your BBQ to about 400 degrees Celsius. Wash the asparagus and snap off the end of each stalk (the ends tend to taste woody). Place the asparagus on a sheet of tin foil and drizzle with extra-virgin olive oil; then top with lemon rind and lemon juice, and a dash of salt and freshly ground pepper. Close the tin foil leaving a slit at the top for steam to escape. Grill on the top shelf of your pre-heated BBQ for approximately 5 minutes (until asparagus is tender and tops are brownish in colour). Remove and place asparagus on serving dish, sprinkle with Parmesan cheese and serve immediately! Enjoy!
