Chocolate Chip Zucchini Muffins #Recipe

If you’re a vegetable gardener like I am then you may have a lot of zucchini sitting around. The good news is you can freeze zucchini, something I did last year at this time, which resulted in garden-fresh zucchini loaves and muffins all winter long. The key to freezing zucchini is to grate it, press it in between two paper towels so that the towels absorb the moisture, then place the grated (and pre-measured) zucchini into freezer-storage bags and put them in the freezer. Frozen zucchini is not only great for baking, but also for soups and sauces.

One of my favourite zucchini muffin recipes is the one here. It is modified from the zucchini muffins recipe featured in the 1983 edition of the “Muffins & More” Company’s Coming cookbook and make a great snack. Enjoy!
